Macadamia Encrusted Sausage Burgers
Okay, so not a true burger since there is no bun but the taste alone will more than make up for it. The macadamia crust is INCREDIBLE and leaves the patty JUICY….Enjoy! Oh, and there a few non-paleo ingredients but this can easily be made without these so just pay attention.

- .75lbs ground sausage
- 1 package sliced mushrooms
- 1 med onion
- 1 egg
- 5 cloves garlic
- macadamia “flour”
- white wine
- spices (basil, oregano, s&p)
Let’s start with the “flour”. I bought a couple of handfuls of macadamia nuts from the bulk isle and tried not to get anymore than I needed because they are expensive (12.99/lb)! Toss them in a food processor and grind up into a flour like consistency and done.
Heat a pan to med heat with some fat of your choice and preheat the oven to 400F. Throw the sausage, 1 egg, 2 cloves minced garlic, and about 1/2 cup of macadamia flour into a bowl and mix all together. Form the mixture into patties of whatever size you like and then coat each side with another dusting of macadamia flour. Place the patties into the pan and brown each side. Once brown, place on a pan and cook in the oven until they’re done. Pork is done at a minimum of 145F says Google.
As those are cooking turn the heat in the pan down to med-low and toss in some butter, some white wine, the mushrooms, the cubed onion and the sliced 3 cloves of garlic. Throw in your spices and let this cook on low until the patties are done (10-15min). I purposely left quantities out here because this should be done by taste, so start tasting!
Once it’s all done just plate and serve. You’ll probably never want a beef burger again.
